The road to this recipe has been a very messy one! I’ve gone through many batters which have refused to cook (think flubber), turned into a pancake scramble, were so salty they tasted like a pretzel (not all that bad, but still not something you want in a pancake), or became one with the pan (making for a not-so-happy mom).
Finally, I’ve developed a batter that is gluten, dairy, grain, and added sugar free, yet is still completely delicious and nutritious. I use coconut flour for these pancakes which seriously has the dreamiest smell! It makes me feel like I’m in a tropical paradise and gives the pancakes an incredible, buttery taste. These cakes are so moist and delicious, sweetened naturally with applesauce, I know you guys will love them!
Perfect Paleo Pancakes-
Recipe from Pilates, Pearls, and Peanut Butter
(Serves 1, makes 6-8 small-medium pancakes)
- 2 eggs
- 1/2 cup unsweetened applesauce
- 1 tsp 100% pure vanilla extract
- 1 tsp cinnamon
- 1/8 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1 TBSP almond flour
- 1 TBSP coconut flour
- Coconut oil spray
First, begin by beating the two eggs in a small bowl. Next, add in the 1/2 cup applesauce, 1 tsp vanilla, 1 tsp cinnamon, 1/4 tsp pumpkin pie spice, 1/2 tsp baking soda, 1 TBSP almond flour, and 1 TBSP coconut flour and mix it all up. Now, coat a large skillet with the coconut oil spray, and allow it to heat on a medium-high temperature. Once it’s heated (this can be tested by hovering your hand a few inches above the pan), spoon in the batter. Small-medium pancakes will cook best. After the first side(s) is/are cooked enough to flip, do so, and continue to cook the pancakes until they are golden brown and lightly crispy. Simply continue this process until you’ve used all the batter.
