Christmas Recap 2015

If you celebrated Christmas yesterday like me, I hope you had a holly, jolly day! My Christmas was certainly lovely! However, no present made it wonderful or special, it was the connections I made with my family. This may sound super corny and cheesy, but I honestly cherish the real, genuine, heart-to-heart I got to have with my sister and the belly-aching laughter shared with my cousins over a card game WAAAYYY more than any gift. I adored spending my evening just being, just relaxing, eating a delicious dinner and a nice treat in my room while watching Gossip Girl and catching up on some Real Life RD. Moments like these are the true gifts people.

This morning as I was peddling away on my recumbent bike and reading my new book, I realized that this year, I’ve given myself the best gifts I could ever receive. My health, my success, my dreams. I’ve worked so hard and have accomplished so much. Last May, I “took the plunge” and started my own food, fitness, and fashion Instagram. Little did I know, but this was a life-changing step. A step towards becoming the people I had wished to be, a step towards my dream. Even more recently, I stepped out of my comfort zone and I started this blog. I’ll be the first to admit, I still have no clue what I’m doing, but still, this blog makes me happy, it’s something that will grow along with me. It fills me with pride, it’s a step towards my dream. Today, I filled out an application for an independent research class offered to advanced students at my school. My topic choice; nutrition, metabolic damage, hypothyroidism, and the negative results of restrictive eating. This application got me really excited! It finally hit me how cool it’s going to be to get to work with real professionals to conduct my research. I’ll get to learn about and share my passion! Again, a step towards my dream. So, as this year comes to an end, I’m reflecting on how utterly blessed I am and how surrounded by opportunity I am. I’m truly thrilled about what I’ve accomplished! 2016, I’m ready! I’m ready to take this blog to the next level, to grow, to learn, to live.

Now that that sap fest is over…how about a Christmas recap!


Starting wiiiiiiittttthhh…Christmas Eve BREAKFAST! Woo woo! I literally saved this mostly empty jar alllll month, planning to have OOIAJ in it. There were definitely some moments of weakness where I just wanted to say, “To heck with it” and enjoy overnight oats in it right then, but I powered through. These OOIAJ are made of 1/2 cup rolled oats, 1/2 tsp chia seed, 1 tsp hemp seeds, 1 tsp flax meal, 3/4 cup almond milk, and 1/2 cup pumpkin puree (trust me, it makes it oooohhhh soooo creeeeamyyy). Topped it all off with some apple and blackberries. Dee-lish!



Holidays=baking, so obvi I spent the day whipping up some goodies including these tahini dark chocolate chunk cookies.

In the past, my breakfast on Christmas was made up of chocolate, cookies, and candy canes (Buddy the elf would approve 🙂 ) Now, I’m far too smart and have for to big of an appetite to subsist on that alone. So, jumping to Christmas Day, I had overnight oats again for breakfast. To get in some veggies and give it some texture, I added in shaved carrot. Sounds weird, I know, but it’s like carrot cake! I also added strawberries, warmed blueberries, coconut butter, peanut butter, and, of course, cinnamon.


For Christmas lunch, I enjoyed some sugar snaps, egg whites, a piece of turkey bacon, some oranges, a couple grapes, and some super tasty pumpkin coffee cake I’d made.

I didn’t snap a pic of dinner, but I had some super good crockpot blueberry BBQ pulled pork, zucchini, more sugar snaps, and a little pumpkin coffee cake. The cake actually was a nice compliment to the pork! This pulled pork is waaaaayyyy better than your traditional fair as, upon my request, we don’t use the fatty gristly part of the pig you’d traditionally use, but rather the delicious, lean part. Who likes that rubbery fat anyway, gross!


I ended the long day on a sweet note with a tasty sampling of my desserts. Of course, this was all enjoyed with some almond milk!


Annnnnddddd bonus I thought I’d throw in today’s breaki since it turned out so colorful! After 15 minutes of 30 seconds fast, 30 seconds regular HIIT followed by 45 minutes of steady on the recumbent bike this morning, it was time to eat! I decided I’d be super cool and make a green drink to have while I stretched to hold me over till breakfast since I wanted to shower before. MOST DISGUSTING thing EVER! The whole time I drank it I thought about college frat boys yelling “Chug, chug, chug!” by a keg and here I am doing the same drinking spinach water. Needless to say, never again. This meant an extra-yummy bowl of overnight oats mixed with shredded carrot, some pumpkin, and apple, then topped with warmed blueberries, peanut butter (regular Trader Joe’s and Wild Friends Sugar Cookie because, why choose?), coconut butter, and cinnamon.

I hope your having a wonderful holiday season! Remember, the best gifts are moments, so don’t miss ’em! Have that cookie and savor it, spend a day in your jammies because you can, do some morning yoga to start your day, go for a walk and TALK, TALK, TALK with a loved one.
