I introduce to you, your new addiction, you’re welcome 😉 . These brownies are so moist and delicious, no one will guess that they’re packed with nutritious ingredients and tons of protein. They’re the perfect way to indulge in some finger-lickin’ chocolatey goodness while still treating your body right. And bonus: they’re Dad AND Granny K. approved.
That woman loves her desserts. Now I know where I get it from 🙂 !
Gooey Black Bean Protein Brownies-
Recipe from Pilates Pearls and Peanut Butter
Make 12 little muffin sized brownies
- A 15 oz can of black beans, rinsed and drained
- 2 spotty, but not overripe bananas
- 1/3 cup 100% pure, Grade B maple syrup
- 1/4 cup chocolate protein powder (I used Vega Protein & Greens)
- 1/4 cup cacao powder
- 1/2 TBSP cinnamon
- 1/4 tsp vanilla bean powder -OR- 1/2 tsp vanilla extract
- 1/3 cup dark chocolate chips, reserve some for sprinkling on top (I used a mix of Alter Eco 85% cacao dark chocolate and Pascha 100% cacao chocolate chips)
- 1/4 tsp sea salt
- Coconut oil spray
First, preheat the oven to 350 degrees F. Next, evenly coat a 12 tin muffin pan with the coconut oil spray. Third, throw all the ingredients except for the chocolate chips into a blender and process until a smooth batter has formed. Once this is complete, stir in the chocolate chips (I like to reserve some to sprinkle on top, but you may use them all). After the chips have been incorporated, pour the batter 3/4 of the way full into the twelve greased muffin tins. If some of the chocolate chips have been set aside, sprinkle them on top now. Once the pan is ready, place it into the preheated oven for about 20-25 minutes. To check if the brownies are done, stick a knife in the middle and once it comes out clean, they’re done. Allow them to cool at least 20 minutes before you attempt to transfer them. They’re best served warm, topped with Nada Moo ice cream or peanut butter or just dipped in almond milk.

When I say “best served warm”, I mean it! Just look at the melty chocolate on top, sooo dreamy. To warm them up, just sprinkle them with a touch of water or put them on a dampened plate/paper towel so they don’t dry out, and microwave for 30-45 seconds.
And I’m also not kidding when I say serve them with ice cream. LIFE.CHANGING. I just tried the Nada Moo brand ice cream and I have to say, it’s by far the best dairy free ice cream I’ve ever had! The dessert I showed in this weeks WIAW, yeah, I’ve had that pretty much every night this week. No shame.
