Happy WIAW everyone! This full day of eating is a recap of this past Sunday which was an amazingly productive day 🙂 …unlike the day before which just seemed to fly by, spent mostly standing in front of my computer screen. It literally felt as if someone had flipped a light-switch from day to night on me while I was diligently working on blog and other things which left me feeling really out of whack and stressed Saturday night. I didn’t feel like I got half the things I wanted to do done and I felt so out of sorts, probably from the lack of location change and not getting outside. This made it my personal goal to get stuff DONE on Sunday. While some people may consider it anal or silly, I made a list and scheduled out how I would spend my day so that I didn’t dilly-dally. That’s just what works for my personality. I’m all for relaxing, but, to me, nothing feels better than being productive and getting a bunch of things (I loved to do) done.
Despite being super exhausted, I actually woke up fairly early for a weekend, around 7:45ish. After the usual face washing, checking my phone, brushing my hair deal, I headed downstairs for some breakfast.
On the weekends, I like to take breakfast prep nice and slow and relax. I chatted with my dad and snapped lots of food pics as I went along.
Toast Numero Uno: My recent obsession! “Chocolate Peanut Butter Strawberry Cheesecake Toast”. It’s the BOMB!!!! All it is is a nice, toasty slice of my new favorite gluten free bread, Canyon Bakehouse, coated with a solid smear of Kite Hill cream cheese (GO BUY THIS NOW!), then smothered with Tru-Nut’s Organic Chocolate Powdered Peanut Butter (pre-mixed with water), topped with some strawberry slices, and then drizzled with more Tru-Nut because “I can’t be tamed”.
Toast Numero Dose: Another golden slice of Canyon Bakehouse slather with Organic Original Tru-Nut, topped with strawberries and blackberries, and drizzled with more Tru-Nut. Basically a fresh take on a PB&J!
The next few hours were spent doing homework, planning out my blog post, and editing photos. But, once my food was all digested, it was time to get in my workout. Instead of taking my rest day this day (Sunday), I wound up taking it on Saturday, so I planned to do the workout I’d missed today.
I did Fitness Blender’s 1000 Calories Workout Video- At Home HIIT Cardio, Strength, and Abs Workout to Burn 1000 Calories. No, this workout won’t actually burn 1000 calories (everyone will burn a different amount based on height, weight, muscle mass, effort, and fitness level), but the idea is that it’s a very challenging workout that really pushes you and fatigues your body. I absolutely love Fitness Blender workout! Working out with Kelli and Daniel actually feels fun and they always work up a great sweat.
Since this workout was so long and it was starting to get to be my lunchtime, I decided to have a mid-workout snack about 50 minutes in.
Mid-Workout Snack (12:45ish)-
This little medjool date had a bit of Nutiva coconut butter and tahini in it was a nice little boost of sugar. I had debated whether or not I should have it, but I was beginning to feel a bit weak and I still had about a half hour or so left of the video. In the end, you should listen to your body, not to any voices in your head that may tell you to just push through it and wait ’til lunch. You’ll feel and perform better. Don’t be afraid to fuel you body, embrace it!
Once the workout was done, I had to take a quick trip to a neighbors to take car of their dog, then it was time for FOOD!!!
This lunch was UH-MAY-ZING!!! I quickly threw some sliced zucchinis (seasoned with oregano and basil) in the oven to roast along with some cherry tomatoes. Next, I cooked up an Applegate turkey burger (love these for quick protein!) and steamed some broccoli drizzled it in lemon juice. Luckily, I had sweet potatoes sliced and pre-roasted, so I just had to throw them in the over for a few minutes to heat and get crisp. Once I plated it all up, I topped my turkey burger with ALLLL the hummus and my sweet potato coins with some Trader Joe’s Chunky PB because the hanger was real. Perfection. DEE-VOWERED!
Next, it was time to work on the blog some more and meal prep. Woo! The first thing I made (which turned out SOOOO GOOD!!!) was some BBQ pulled chicken breast.
So tender, flavorful, and juicy!!! My other preps included roasted eggplant (seasoned with oregano, basil, and sea salt), roasted zucchini (seasoned with oregano and basil), roasted sweet potato, roasted carrots, roasted cherry tomatoes (seasoned with oregano and basil), Applegate turkey burgers, brown rice, grilled asparagus (frozen, from Trader Joe’s), and crunchy PB stuffed medjool dates.

After all that prepping, I suddenly got super hungry. It was time for a snack before I headed off to religious ed.
Squarebars are life! You’ve gotta check them out ASAP.
After religious ed, I was totally pooped and ready to get some dinner. My appetite was weird though and I wasn’t quite sure what to have, so I threw together this random meal.
Some of my pre-prepped BBQ pulled chicken breast, steamed broccoli, and (here’s the curb-ball) cereal with almond milk. Weird as it may seem, these Arrowhead Mills Organic Sprouted Corn Flakes with Califia Farms Almond Milk hit the spot.
After enjoying this while scrolling through a couple blogs and watching some Netflix, I headed off to bed, flipped through a magazine, and then it was lights out.
