WIAW #5- Waffles, Trader Joe’s Find, and Cereal for Dinner?!?

Hey everyone! Welcome back for another WIAW 🙂 . This was quite a busy day full of grocery as well as general shopping. As you’ll see,  this post features some inspiring, delicious meals, as well as an uhhh….random, shall we say, dinner. It seems I always end up making WIAW posts on hectic Sundays, so my posts have shown a trend of cereal for dinner. Interesting…But hey, some have the tradition of Sunday roasts and I guess I have the tradition of Sunday cereal.

Anyway, enough rambling, time for a recap of my eats!

I woke up around 8 with a sore, dry throat and runny nose (possibly a combination of running hard and being outside, with all the pollen, at my track meet the previous day), so it was a good thing today was my rest day! After downing my usual two bottles of water, washing my face, brushing my hair, and putting on my slipper booties, I headed to the kitchen to whip up breakfast.

Breakfast (9:30ish)-

Sundays mornings are reserved for Double Dose waffles, so breakfast was a no brainer. Here are my chocolate chip waffles all styled-up, topped with gooey baked banana coins, and drizzled with lots of chocolate, Tru Nut Butter and a peanut butter sauce.

Once I’d shot some pics for Instagram, I put my whole meal together, adding a side of egg whites and a mug of matcha tea with lemon. This meal was, of course, accompanied by Netflix and reading blog posts.

After breakfast, my mom and I headed out to do some shopping. Trader Joe’s was a necessary stop (duh!) and there I picked up some of these new bars to try. I got “Ah, Fudge Nuts” and “Cookie Doughness”. Since these bars are geared towards athletes due to their 4:1 ratio of carbohydrates to protein and the ingredients were simple, I thought, why not give them a try?

Snack (1:30ish)-

By now, I was getting pretty hungry and we still had a few more stores to go to, so I was really glad I had packed this bar. If you’ve never tried Rx Bars, I’d highly recommend them! The ingredients can’t be beat, plus they offer 12 grams of protein. Also this flavor, mint chocolate, is so fudgey, it tastes like a dessert!

Lunch (3:45ish)-

Lunch was late, I know. I’m so bad about eating lunch at a normal time on the weekends. This obviously meant I was super starved when we got home from shopping. I had an Applegate turkey burger topped with hummus, roasted zucchini and tomato, which I’d seasoned with basil and sea salt (I went back for a little more of this), a small baked sweet potato topped with Trader Joe’s crunchy PB (had to add more PB too, duh!) and a sprinkle of cinnamon, and a gala apple. This hit meal the spot!

Tea (5:30ish)-

I had this mug of lemongrass matcha green tea to power me through meal prepping and studying genetics.

What I Prepped:

For three days’ worth of lunches, I prepped this pasta salad dish. To make them, I used Eat Banza pasta shells, a vegan hemp seed Caesar dressing I’d thrown together, peas, broccoli, chicken apple sausage, and a sprinkle of nutritional yeast.

As you can see, they packed pretty well for lunches during the week. But, I was definitely glad to have my apple to go with it or else my breath would have smelt garlicky. 

Dinner (9:00ish)-

Annnddddd this is where it gets random. Since I got home from Religious Ed. pretty late and was absolutely famished (I usually eat a snack before I go, but didn’t have time today), I was in the mood for everything. For the “dinner” part of dinner, I had a small salad topped with a Hilary’s Eat Well Black Rice veggie burger and some of the vegan hemp Caesar dressing I’d made for my pasta salads.

Since it occurred to me that having cereal on the side wouldn’t work out since it’d get soggy, I opted to have it after the “dinner” part of dinner, sort of like a dessert. This big bowl is filled with Love Grown Chocolate O’s (cereal made of beans!) mixed with Arrowhead Mills Gluten Free Sprouted Corn Flakes and covered in almond milk. I don’t go a day without having this cereal bowl. I may of may not have had it twice yesterday, not gonna lie.

On the side of my cereal, I also had a little spoon of Trader Joe’s crunchy PB mixed with Peanut Butter and Co’s White Chocolate Wonderful PB.

    I love cereal and will have it for dinner from time to time 😊 My go to bar is the chocolate chip cookie dough Larabar! It’s dense and keeps me full which I usually need between meals. Thank you for sharing such delicious food!
