Weekend Fun: Terra’s Kitchen Kickoff and Some Killer Workouts

Reflecting on this past weekend, it was quite a busy one! That being said, it was also full of new experiences, new people, delicious food, and laughs.


I had Friday off, so it was a three day weekend! When I got home from school, I wasn’t sure what I wanted to do for my workout, but decided on a LISS workout on my recumbent bike. I love how I can watch Netflix, scroll through Instagram or Pinterest, or get reading done for school while working up a serious sweat. I did 45 minutes, mostly at a comfortably difficult pace on the bike at the highest level of resistance (I always use this level so it’s more challenging). To get my heart rate soaring and pick up the intensity, every 5 minutes I would do 1 minute as hard as I could.

After this workout, I tried out a chocolate protein mug cake recipe. I still need to tweek it a bit, but it turned out pretty well.



I spent the day working on homework, grocery shopping, baking cookies, and working on the blog. I also got in a killer workout: Fitness Blender’s 1000 Calories Workout Video Strength, HIIT Cardio, and Abs Workout to Burn 1000 Calories. As I’ve said before, no this workout will not actually burn 1000 calories for everyone (varies depending on weight, height, muscle mass, skill level, etc.), but, yes, it will push you and build endurance. Annnndddd it will work up an appetite for tasty night caps like the one below. Nada Moo topped with my Mason Jar Cookie Company cookies.



I spent the majority of my day working at the Regional track meet my school was hosting. RAIN, RAIN, RAIN can pretty much sum that up. Luckily, I had the Terra’s Kitchen Kickoff event to look forward to!

It was such an incredible evening! For one, it benefited Ed Reed’s amazing foundation which provides inner city children with access to fresh, healthy food. 13232970_10207711124349910_4663460262130375110_nAdditionally, I got to connect with other bloggers and Instagrammers in the area. They were all so sweet and supportive, offering me advice and inviting me to other events. But, the highlight was definitely the food.FullSizeRender (55)

If you’ve never heard of Terra’s Kitchen, it is a company that delivers nutritious, flavorful recipes, along with all the ingredients right to your door for easy preparation. Basically a weeknight holy grail. At the Kickoff, they served a buffet of various meals from their menu. Although their entire menu isn’t gluten, dairy, and soy free, they do have many options that cater to various dietary restrictions and make sure to carefully label allergens.

This is the “Happy Chicken Salad Bowl” from their menu, sans chicken. It’s a spinach salad with spiced mango, blueberries, red quinoa, and a scallion mint dressing. Personally, I didn’t try it, although I could have since it’s dairy, gluten, and soy free. However, my mom did and says “It was exceedingly fresh! Everything was, that’s what I liked about it.”

This is their Cucumber Carrot Slaw which goes along with their Roasted Salmon. Since it has soy sauce in it I couldn’t try it, but, again, my mom did and loved it. Regarding the salmon, I was so sad it had soy in it too, It looked and smelled AMAZING.

Now for one of my favorites: the tacos. These are their Grilled Chicken (in the silver tray) Tacos with an Avocado Goat Cheese Sauce and Pico de Gallo. Due to the dairy, I didn’t have the sauce, but I did try the tortillas, chicken, and pico, and let me tell you, they have me hardcore craving Mexican food now! The chicken was so tender and juicy with a slightly charred taste. The tortillas were so fresh and had a slightly smokey flavor from being cooked over flame; and that pico, that pico was OUT OF THIS WORLD!

I never thought such a basic combination could be so dreamy. This was their Southwestern Steak and Sweet Potato Bowl. In it was the most tender jalapeno spiced skirt steak, almost caramelized tasting, roasted garlic sweet potatoes, and oh-so-creamy, roughly mashed avocado.

(Don’t worry, this was just round 1) Here’s my plate of the Chicken Taco with pico, the Southwestern Sweet Potato Steak Bowl, and some of their Big Island Steak Bowl. The latter had tender, spiced skirt steak, caramelized, grilled pineapple, fluffy jasmine rice, and scallions. Mixing the dishes together made them taste even better. The pineapple and avocado complimented the Chicken Taco with pico, the pico complimented the Southwestern Steak and Sweet Potato bowl, and the avocado complimented the Big Island Steak Bowl. There was no questioning getting seconds.

Another super fun part of the evening was the cook-off between Terra’s Kitchen (left) and Blue Apron (right). I honestly don’t know who won! I was too busy chatting it up with some other bloggers, whoops 🙂 .


Speaking of winning, my dad won one of the raffles at the Kickoff. Here he is basking in all his new goodies. The lucky duck got Beats, a signed Ed Reed poster, dark chocolate, a Pandora gift card, a restaurant gift card, basil and carrot seeds, an apron, and a Terra’s Kitchen sticker. He’s seriously been wearing those Beats ALL over the house. Needless to say, since I’m the one who took him to this event, I’m now the favorite child. Having a blogger daughter has its perks 🙂 .

    I have been craving almond butter lately–and indulging in it 😉 My favorite workout to push myself is to go on a nice run and push myself for time. That protein mug cake looks amazing! I may have to do a little experimenting myself with a mug cake!

      I just got on an almond butter kick myself! I’m trying to get back to more basic, whole foods right now since that’s what my body wants. I agree, running for time and hitting it, or exceeding your expectations, is such a rush. I’ve always wanted to experiment with mug cakes more too, but I have to say, it can be quite scary! I’ve definitely had my fair share of flops 🙂 .
