Bacon, Egg, and Pesto Toasty With A Twist

As you can see, rather than just make your typical two slices of bread stuffed with whatever sandwich, I decided to give the classic a twist by making the top slice of bread “eggs in a basket” style. This allows for all the yolky yum without the fuss of the egg slipping out of the sandwich…onto the floor. Yeah…been there, done that.

Serves: 1


  • 2 slices of bread (gluten free, if necessary)
  • 2 slices of bacon (can be turkey, regular, veggie, etc.)
  • 1 egg
  • 1 1/2 TBSP pesto (homemade or store bought)
  • olive oil to brush
  • (optional) garlic salt to garnish



Cook the bacon according to package and set aside somewhere where it can stay warm. Next, in one of the bread slices, cut a circle with an ~1 1/2-2 inch diameter, depending on the slice's size. Discard or set aside the bread the circle cut out of the bread. Lightly brush one side of each of the bread slices with olive oil and place both in the toaster oven, brushed side up until they turn a light, golden brown. Then, take both out of the toaster oven and flip to the other side, spreading this side with a layer of pesto. Only place the slice of bread without a hole back in the toaster oven, pesto side up to toast.


In a small, warm skillet, place the slice of toast with the hole pesto side down. Crack the egg and drop it into the hole. Optionally grind a dash of garlic salt onto the egg, then cover and cook on a medium heat. It is done once the white has been completely cooked, but the yolk is still runny. If a runny yolk is not desired, cook longer.


To assemble, take the toasted, full slice of bread out the toaster oven and place it on a plate, pesto side up, then place the two slices of bacon on top of this, and finally put the cooked "egg in a basket" on top, pesto side down. This is best served warm.

    Venison bacon! Absolutely the best! Cooked yolk for sure! I use Vega One and Vega Sport for a big part of my daily protein plus lean meat.

      I’ve never tried venison bacon! I may have to add that to my foodie “try list”. I usually like my yolks mostly cooked too. Vega protein is great! I especially love the Vega and Greens since it’s protein plus veggies in one.

    This looks awesome, Meah! I will have to make this super soon! My fave is pork bacon… like there’s even a contest?! haha. My fave proteins are definitely salmon and chicken because they’re so easy to make.

      Oh my gosh, it’s so amazing! And easy too which I think is the best part. Salmon and chicken are my top two faves also!!! Especially salmon, I swear I would eat it for dinner every night if I could.
