Hello all you veggie-loving-vixens 😉 ! I was planning to put up another 5-minute workout post as part of my “Fit in Five” January series, but I opted for a little twist on the whole “Fit in Five” thing. You see, working out is a HUGE part of fitness, however what’s even more important is nutrition.
This vegan protein soft serve is the perfect quick and easy snack (or even dessert!) to fill you with energy and give you a health boost.
You see, I’ve got a secret. It was me who ate the last cookie…no, no, I kid, I kid (not that that’s never happened before 😉 ).
THE SECRET: This creamy, dreamy treat actually gets its thick, smooth texture from…CAULIFLOWER.
That’s right, move over kale because cauliflower is here to take over the veggie smoothie scene. Flower power people. FLOWER. POWER. 😉 .
Hidden Veggie Blueberries and Cream Protein Soft ServePrint Recipe
- 1 small, ripe, frozen banana
- 1 cup frozen, riced cauliflower
- 3/4 cup almond milk
- 1 scoop Vanilla Ka'Chava Tribe Protein Powder (sub other as desired)
- 1 TBSP cashew butter
- 1/2 tsp vanilla
- 5 ice cubes
- 1/8 tsp sea salt
- (optional) 1/4 tsp xanthan gum
- (to top) 1/3 cup frozen blueberries, microwaved until the juice seeps out
Place all the ingredients except the blueberries in a high speed blender and blend until a smooth, thick consistency forms. Place in a bowl or glass as desired and top with the melted, juicy blueberries. Give it a swirl and devour!
Delicious food aside, I’d like to take a moment to acknowledge the craziness going on in the world. Politics are a sensitive topic for a lot of people, but regardless, I encourage you all to stand up, speak out, and sprinkle kindness around like chocolate chips in brownie batter.
