This deliciously comforting food is the perfect nourishing breakfast for the cool months ahead. My mom and I have been enjoying this meal pretty much every day for the past two months. It’s been so fun mixing up the toppings to transform it from a fresh fruit-filled summery treat to a pumpkiny-spiced bowl of warmth and happiness. This brown ricemeal is very similar to oatmeal, hence the name and can be enjoyed in the same ways. The road to this recipe has been a very messy one. I’ve gone through many batters which have refused to cook (think flubber), turned into a pancake scramble, were so salty they tasted like a pretzel (not all that bad, but still not something you want in a pancake), or became one with the pan (making for a not-so-happy mom).
